Marinated Mushroom Recipe

Made with small button mushrooms, this
marinated mushroom recipe is a great change of pace from the typical vegetable side dish. A healthy dose of extra virgin olive oil makes it rich and satisfying.
Button size crimini mushrooms are the best choice for this recipe. With richer flavor than common white mushrooms, these baby portobello shrooms grill nicely, and have a great texture.
Marinated Mushrooms
The mushrooms are grilled before tossing in the olive oil based dressing.
INGREDIENTS

2 pounds of small, crimini mushrooms

2 medium size lemons

2 cloves of garlic, minced

2 teaspoons fresh thyme, chopped fine

1/4 teaspoon salt

1/4 teaspoon black pepper
Preheat your outdoor grill. Wipe the mushrooms clean with a damp towel and trim the tips from the stems. Brush lightly with olive oil, and grill over medium-high heat for two to three minutes.
Juice and zest the lemons, and combine with the remaining olive oil, garlic and thyme, salt and pepper. Whisk the dressing and add the grilled crimini mushrooms, tossing gently.
Allow the mushrooms to marinate for at least one hour on the countertop. You can make this
marinated mushroom recipe the day before, refrigerating overnight. Best served at room temperature for maximum flavor.
