Grilled Red Potatoes

Serve these rosemary infused
grilled red potatoes anytime the occasion calls for something special. The wonderful evergreen flavor of the rosemary provides an unusually enticing note to the dish.
Fresh rosemary is a coarse herb, similar in shape to pine needles. To release the flavor they must be slightly crushed before added to the dish.
Grilled Rosemary Potatoes
The first step in this recipe involves making a rosemary infused butter, which is used to season the potatoes before grilling.
INGREDIENTS

1 sprig of fresh rosemary, or 1 teaspoon dried rosemary

1/4 cup butter

3 pounds of red potatoes, sliced 1/4 inch thick

1 teaspoon salt
In a small sauce pan, melt the butter over low heat. Crush the fresh rosemary to release the flavor. An easy way to do this is to remove the needles from the stem, then lightly pound them on a cutting board with a meat tenderizer or the dull side of a heavy kitchen knife.
Add the crushed rosemary to the melted butter. Cover and remove from the heat to cool.
In a medium bowl, salt the red potato slices. Pour the rosemary butter through a strainer onto the potatoes, gently tossing to cover all sides. Let the potatoes rest for at least 30 minutes, allowing time for the flavor to be absorbed into the slices.
The potatoes can be grilled any way you like. If using your outdoor propane or charcoal grill, cook them over direct medium heat for 10 to 15 minutes, or until lightly browned and tender. They also cook well in an indoor electric grill, or a stovetop cast iron grill pan.
