Grilled New Potatoes
Simple and tasty, grilled new potatoes
can be cooked in a matter of minutes. These small potatoes, whether red or white, can be grilled whole or cut into halves or slices. When quartered, they make dandy grilled potato wedges.
The small new potatoes have a more solid texture and sweeter flavor than mature potatoes. The reds and Yukon Golds have a more waxy texture than the white potatoes.
Unlike mature potatoes they are often stored in the refrigerator, which tends to increase the sweetness. When potatoes are exposed to cold, enzymes cause some of the starches to be converted to sugar.
Grilling New Potatoes
New potatoes can be grilled on your charcoal grill or your gas grill outdoors. They also grill nicely on a wide variety of indoor grills. Small electric grills with hinged lids work especially well since the new potatoes are cooked on both sides simultaneously.
Electric Grill Potato Disks
One pound new potatoes
Salt and pepper
Dried dill week (optional)
Slice the potatoes evenly into 1/2 inch slices. Coat each side with olive oil, then season with salt, pepper and dill. Place in a preheated electric grill and cook for 10 to 15 minutes, or until tender. Serve with another drizzle of olive oil, if desired.
Grill Whole New Potatoes
Three pounds of new red potatoes
Vegetable oil or olive oil
1 teaspoon of seasoned salt
Wash the potatoes thoroughly and trim off any imperfections. Oil lightly and season with the seasoned salt and oregano. Cook in a covered charcoal or gas grill using indirect heat until done. Serve hot with butter.
New Potato Recipe - Grilled Wedges
Two pounds of red or white new potatoes
Spray cooking oil
1/2 teaspoon kosher salt
1/2 teaspoon coarse ground black pepper
1/4 teaspoon cayenne pepper (optional)
1/2 cup Ranch dressing
Wash the potatoes and cut in half, then in half again to make wedges. Spray them with a light coating of cooking oil, then season with the salt and peppers. Grill over direct medium heat in your charcoal or gas grill, on a preheated electric grill. Brown the two cut sides of each wedge, the grill the skin side until done. Serve with Ranch dressing for dipping.
